Ingredients
6 eggs
1 1/2 cup milk
1 cup flour
3 TBLS sugar
1 tsp vanilla extract ***
1/2 tsp salt
1/4 tsp cinnamon
1/2 cup butter (or stick - NOT tub) *
2 apples, peeled and sliced thin **
2-3 TBLS brown sugar (optional)
Directions
Preheat oven to 425
mix first 7 ingredients till blended (eggs - cinnamon)
melt butter in 13x9 pan in oven (this is what "greases" the pan, too)
add apple slices to pan in a single layer
return pan to oven till butter "sizzles"....do not brown
pour batter over apples
sprinkle with optional brown sugar
bake in the middle of oven 20 minutes or till puffed and brown - serve hot
Footnotes
* 1 stick = 1/2 cup
** almost any kind works, EXCEPT red delicious, which turns to mush when cooked. If the apples are small use 3 - enough to cover the bottom of the pan
*** use real vanilla extract, not imitation. It's one of those items where you get what you pay for. Use the real stuff even though it costs more
